Butter beans!!! But not those huge no-color beans that the stores call butter beans. I LOVE the butter beans like my grandparents used to grow in their garden. The closest thing I can find to those is what the stores call "baby lima beans." And the best way to fix them is to cook them with some ham/bacon, salt, and sugar. Mmmmmmmmmmmmmmmmmmm.
I make a nice vegetable dish, with asparagus, heart of palm, and artichoke hearts - lightly cooked with a little olive oil and some balsamic vinegar. In general, I am a good vegetable eater.
Well, uh,....Herbert. Thank you for that bit of gardening advice. Had I a garden, Red Pod Okra would be the next planted seed!

I also love broccoli (especially with cheese, and especially in a casserole), AND squash, AND butter beans! My first experience with butter beans was at my friend's house in Atlanta, GA. Family recipe. Oh wow! I didn't know beans could be that good!

Broccoli, hands down. My grandson calls 'em "trees" and eats all he can get. Smart lad, that one.

Potato Chips
The "Red Pod Okra" is fast growing and bountiful. The foliage and fruit have a lush, tropical appearance. Quite tasty!
